Method
- Prepare the cranberry base by simmering cranberries, maple syrup, and half a cup of water until the berries burst.
- Infuse with orange zest and spices.
- Activate agar-agar by whisking it into cold water and adding it to the cranberry mixture, then boil for 2 minutes.
- Pour the cranberry mixture into a glass bowl and refrigerate for 20 minutes until firm.
- Combine coconut milk, sweetener, and another teaspoon of agar-agar in a saucepan and boil for 2 minutes.
- Spoon the creamy mixture over the first layer using the back of a spoon to avoid breaking the layer.
- Prepare a final thin layer of juice mixed with agar-agar and pour over the set coconut layer.
- Chill for at least 4 hours or overnight.
Notes
Store in the refrigerator covered to avoid odor absorption. Best consumed within 5 days. Do not freeze as it alters the texture.
