Ingredients
  

  • 2 cups fresh or frozen cranberries
  • 1 teaspoon agar-agar powder
  • Organic orange zest and juice from 1 orange
  • 1 can full-fat coconut milk
  • Maple syrup or agave nectar to taste
  • A pinch of ground cinnamo
  • A pinch of ground cloves
  • Filtered water
  • Pomegranate arils for garnish

Method
 

  1. Prepare the cranberry base by simmering cranberries, maple syrup, and half a cup of water until the berries burst.
  2. Infuse with orange zest and spices.
  3. Activate agar-agar by whisking it into cold water and adding it to the cranberry mixture, then boil for 2 minutes.
  4. Pour the cranberry mixture into a glass bowl and refrigerate for 20 minutes until firm.
  5. Combine coconut milk, sweetener, and another teaspoon of agar-agar in a saucepan and boil for 2 minutes.
  6. Spoon the creamy mixture over the first layer using the back of a spoon to avoid breaking the layer.
  7. Prepare a final thin layer of juice mixed with agar-agar and pour over the set coconut layer.
  8. Chill for at least 4 hours or overnight.

Notes

Store in the refrigerator covered to avoid odor absorption. Best consumed within 5 days. Do not freeze as it alters the texture.
