Ingredients

  • 4 very overripe bananas
  • 8 tablespoons unsalted butter
  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Method

  1. Preheat your oven to 350°F (175°C). Position your oven rack in the center.
  2. Grease your loaf pan with butter or non-stick spray and line with parchment paper.
  3. In a large mixing bowl, mash the bananas until smooth.
  4. Stir the melted butter into the bananas. Add sugar, beaten egg, and vanilla extract.
  5. Sprinkle baking soda and salt over the mixture. Sift in the flour and fold gently until no white streaks remain.
  6. Pour the batter into the prepared pan and smooth the top. Bake for 45 to 55 minutes, checking with a toothpick.
  7. Let the bread rest in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Ensure bananas are very ripe for maximum sweetness. Weigh flour for accuracy. Use room temperature eggs to prevent curdling.
