- Preheat your oven to 350°F (175°C). Position your oven rack in the center.
- Grease your loaf pan with butter or non-stick spray and line with parchment paper.
- In a large mixing bowl, mash the bananas until smooth.
- Stir the melted butter into the bananas. Add sugar, beaten egg, and vanilla extract.
- Sprinkle baking soda and salt over the mixture. Sift in the flour and fold gently until no white streaks remain.
- Pour the batter into the prepared pan and smooth the top. Bake for 45 to 55 minutes, checking with a toothpick.
- Let the bread rest in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
Ensure bananas are very ripe for maximum sweetness. Weigh flour for accuracy. Use room temperature eggs to prevent curdling.
