Ingredients
  

  • 1 Whole Smoked Ham (8-10 lbs)
  • 1 Cup Organic Raw Honey
  • 3 Fresh Jalapeños, finely minced
  • 1/2 Cup Apple Cider Vinegar
  • 2 Tablespoons Dijon Mustard
  • 1 Teaspoon Smoked Paprika
  • 1/2 Teaspoon Ground Cloves
  • Zest of One Lime

Method
 

  1. Preheat your oven to 325°F (165°C) and position the rack in the lower third.
  2. Score the surface of the ham in a diamond pattern to allow the glaze to penetrate.
  3. Place the ham on a roasting rack, add water or apple juice to the pan, cover with foil, and roast for 1.5 to 2 hours.
  4. While the ham roasts, simmer the honey, minced jalapeños, apple cider vinegar, Dijon mustard, paprika, and cloves in a saucepan for about 10 minutes until thickened.
  5. Remove the foil from the ham and brush the glaze generously on the surface.
  6. Increase the oven temperature to 375°F (190°C), return the ham uncovered, and baste every 15 minutes for the final 45 minutes.
  7. Once the internal temperature reaches 140°F (60°C), let the ham rest for 20 minutes before slicing.

Notes

Let the ham sit at room temperature for about 30 minutes before cooking. Use a thermometer to check doneness.
