Method

  1. Preheat the oven to 350°F (175°C). Lightly grease a baking dish or sheet pan large enough to hold the slider buns.
  2. In a small bowl, stir together the mayonnaise, red wine vinegar, Italian seasoning, garlic powder, salt, and black pepper to make the grinder spread.
  3. Without fully separating the buns, slice the slider rolls horizontally and place the bottoms in the prepared baking dish.
  4. Spread the grinder sauce over the bottom halves of the buns. Layer on the ham, salami, and provolone cheese evenly over the rolls.
  5. Top with the lettuce, tomato slices, red onion, and banana peppers. Place the bun tops over the filling.
  6. Mix the melted butter, Parmesan, garlic powder, and dried parsley in a small bowl, then brush the mixture over the tops of the sliders.
  7. Bake for 12 to 15 minutes, until the cheese is melted and the tops are lightly golden. Serve warm.
  8. If desired, add a little extra lettuce or banana peppers after baking for a fresher grinder-style finish.

Notes

For the best texture, add the lettuce and tomato after baking if you prefer them extra fresh. You can also swap provolone for mozzarella or add sliced pickles for more tang.
