Method
- Preheat your oven to 325°F (160°C) and prepare a water bath with ramekins.
- Sauté shallot and garlic in olive oil until soft.
- Warm cream in a saucepan until just simmering.
- Whisk egg yolks with mustard, nutmeg, and cayenne. Slowly mix in warm cream.
- Add sautéed shallot and garlic, cheese, and chives. Season with salt and pepper.
- Divine crab meat into ramekins and ladle custard over it.
- Bake in water bath for 30-35 minutes.
- Cool and refrigerate for at least 4 hours.
- Sprinkle sugar on top and torch until caramelized before serving.
