Ingredients
  

  • 1 pound fresh crab meat, lump or jumbo lump, picked clean of shells
  • 1 ½ cups heavy cream
  • 3 large egg yolks
  • ½ cup grated Gruyère cheese
  • 1 small shallot, minced
  • 1 clove garlic, minced
  • 2 tablespoons fresh chives, chopped
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon nutmeg
  • pinch of cayenne pepper, optional
  • sea salt and freshly ground black pepper, to taste
  • 2-3 tablespoons granulated sugar
  • 1 tablespoon olive oil

Method
 

  1. Preheat your oven to 325°F (160°C) and prepare a water bath with ramekins.
  2. Sauté shallot and garlic in olive oil until soft.
  3. Warm cream in a saucepan until just simmering.
  4. Whisk egg yolks with mustard, nutmeg, and cayenne. Slowly mix in warm cream.
  5. Add sautéed shallot and garlic, cheese, and chives. Season with salt and pepper.
  6. Divine crab meat into ramekins and ladle custard over it.
  7. Bake in water bath for 30-35 minutes.
  8. Cool and refrigerate for at least 4 hours.
  9. Sprinkle sugar on top and torch until caramelized before serving.
