Method
- Preheat your oven to 400°F (200°C).
- Wash the carrots thoroughly and trim the tops.
- Slice the carrots on a diagonal into two-inch pieces.
- In a large mixing bowl, whisk together honey, olive oil, salt, and pepper.
- Add carrot pieces to the bowl and toss until coated.
- Spread the carrots in a single layer on a baking sheet.
- Roast for 20 to 25 minutes, flipping at halfway.
- Remove when tender and golden brown, then sprinkle thyme leaves over the top.
Notes
Use organic rainbow carrots for enhanced flavor and color. Pay attention to not crowd the carrots in the pan to achieve a perfect roast. Store leftovers in an airtight container for up to four days.
