- Wash the carrots under cool running water, remove tops, and peel the skin.
- Slice the carrots into uniform diagonal coins or keep them whole if slender.
- Place carrots in a skillet, add water or broth, and sprinkle salt.
- Cover and simmer over medium heat for 5-7 minutes until tender but slightly firm.
- Remove lid and increase heat to evaporate excess moisture.
- Lower the heat, add butter and honey, and stir gently until combined.
- Cook in the honey mixture for 3-4 minutes, tossing frequently until coated.
- Turn off heat, garnish with parsley and black pepper, and serve.
Notes
Use quality organic carrots for best flavor. For a vegan option, replace honey with maple syrup and butter with olive oil. Store leftovers in an airtight container for up to four days.
