Ingredients
  

  • 1 pound of medium-sized carrots
  • 2 tablespoons of raw honey
  • 1 tablespoon of unsalted butter
  • a pinch of sea salt
  • 1 tablespoon of fresh parsley, chopped
  • 1/2 cup of water or vegetable broth
  • black pepper to taste

Method
 

  1. Wash the carrots under cool running water, remove tops, and peel the skin.
  2. Slice the carrots into uniform diagonal coins or keep them whole if slender.
  3. Place carrots in a skillet, add water or broth, and sprinkle salt.
  4. Cover and simmer over medium heat for 5-7 minutes until tender but slightly firm.
  5. Remove lid and increase heat to evaporate excess moisture.
  6. Lower the heat, add butter and honey, and stir gently until combined.
  7. Cook in the honey mixture for 3-4 minutes, tossing frequently until coated.
  8. Turn off heat, garnish with parsley and black pepper, and serve.

Notes

Use quality organic carrots for best flavor. For a vegan option, replace honey with maple syrup and butter with olive oil. Store leftovers in an airtight container for up to four days.
