- Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- Toss the cut potatoes with vegetable oil, salt, black pepper, and garlic powder until evenly coated.
- Spread the fries in a single layer on the prepared baking sheet, making sure they are not crowded.
- Bake for 25 to 35 minutes, flipping halfway through, until the fries are golden brown and crispy.
- Remove the fries from the oven and sprinkle the cheddar and mozzarella evenly over the top.
- Add the crumbled bacon over the cheese and return the tray to the oven for 3 to 5 minutes, or until the cheese is melted and bubbly.
- Transfer the loaded cheese fries to a serving platter and top with sliced green onions and chopped parsley, if using.
- Serve immediately with sour cream on the side or drizzled over the top.
Notes
For extra crispy fries, soak the cut potatoes in cold water for 20 to 30 minutes before baking, then dry them thoroughly. You can also swap the bacon for cooked turkey bacon or leave it out for a vegetarian version.
