Method
- Pour the 1/2 cup of cold water into a small bowl. Sprinkle the gelatin evenly over the surface. Let it sit for 5 to 7 minutes.
- In your saucepan, heat the fruit juice or tea over medium-low heat. Use your thermometer to ensure it reaches about 130°F. Do not let it boil.
- Once the juice is warm, add the bloomed gelatin mass. Stir constantly until the mixture is completely translucent.
- Remove the pan from the heat. Stir in your stevia or monk fruit and any optional extracts or ginger. Taste the liquid.
- Pour the mixture into your ramekins or silicone molds. Place them in the refrigerator for at least 4 hours.
Notes
Selecting high-quality ingredients is critical. Grass-fed gelatin is recommended for its superior protein profile. Avoid high-fructose blends in juices. Store individual portions in airtight containers in the refrigerator for up to 7 days.
