Method
 

  1. Pour the 1/2 cup of cold water into a small bowl. Sprinkle the gelatin evenly over the surface. Let it sit for 5 to 7 minutes.
  2. In your saucepan, heat the fruit juice or tea over medium-low heat. Use your thermometer to ensure it reaches about 130°F. Do not let it boil.
  3. Once the juice is warm, add the bloomed gelatin mass. Stir constantly until the mixture is completely translucent.
  4. Remove the pan from the heat. Stir in your stevia or monk fruit and any optional extracts or ginger. Taste the liquid.
  5. Pour the mixture into your ramekins or silicone molds. Place them in the refrigerator for at least 4 hours.
