Method
- Bloom the gelatin by sprinkling it over half a cup of cold filtered water and letting it sit for 5-10 minutes.
- Simmer berries with remaining water in a medium saucepan for about 8 minutes until broken down.
- Blend the berry mixture with honey and lemon juice, and strain through a fine-mesh sieve.
- Whisk the bloomed gelatin into the warm berry liquid until fully dissolved.
- Pour into a glass baking dish and refrigerate for at least 4 hours or overnight.
- Once set, cut into squares and serve.
Notes
Keep in an airtight container in the fridge for up to 7 days. Do not freeze.
