Ingredients
  

  • Fresh or frozen berries
  • Grass-fed beef gelati
  • Raw honey or maple syrup
  • Fresh lemon juice
  • Filtered water

Method
 

  1. Bloom the gelatin by sprinkling it over half a cup of cold filtered water and letting it sit for 5-10 minutes.
  2. Simmer berries with remaining water in a medium saucepan for about 8 minutes until broken down.
  3. Blend the berry mixture with honey and lemon juice, and strain through a fine-mesh sieve.
  4. Whisk the bloomed gelatin into the warm berry liquid until fully dissolved.
  5. Pour into a glass baking dish and refrigerate for at least 4 hours or overnight.
  6. Once set, cut into squares and serve.

Notes

Keep in an airtight container in the fridge for up to 7 days. Do not freeze.
