- Bloom the Gelatin: Pour half of the cold fruit juice into a small bowl and sprinkle the gelatin powder evenly over the surface. Let it sit for about 5 to 10 minutes.
- Heat the Base: In your saucepan, bring the remaining juice and your chosen sweetener to a very light simmer over medium-low heat.
- Combine and Dissolve: Add the bloomed gelatin mixture to the warm juice and whisk until it dissolves.
- Integrate the Protein: Slowly sift your protein powder into the mixture while whisking vigorously.
- Flavor and Pour: Stir in vanilla extract and a pinch of sea salt, then pour the liquid into silicone molds.
- The Setting Phase: Place the molds in the refrigerator and allow them to chill for 3 to 4 hours.
- Unmold and Enjoy: Peel back the silicone edges and pop out the cubes.
Notes
Store in an airtight glass container for up to 7 days. Avoid freezing to maintain texture.
