Ingredients
  

  • 2 tablespoons Grass-fed Gelatin Powder
  • 2 large Pasture-raised Eggs
  • 1 scoop Protein Powder
  • 1/4 cup Oat Flour
  • 3 tablespoons Almond Milk
  • 1/2 teaspoon Baking Powder
  • 1 pinch Cinnamo

Method
 

  1. Bloom the gelatin by sprinkling it over almond milk and letting it sit for three minutes.
  2. Whisk the pasture-raised eggs in a glass bowl until small bubbles form on the surface.
  3. Add the bloomed gelatin mixture to the eggs and whisk until smooth.
  4. Slowly fold in the protein powder, oat flour, baking powder, and cinnamon.
  5. Heat a ceramic skillet over medium-low heat and add a small amount of oil or butter.
  6. Pour two tablespoons of batter into the hot pan for each pancake.
  7. Wait for small bubbles to form around the edges before flipping.
  8. Cook the other side until golden brown, then remove and stack on a plate.

Notes

Ensure eggs are at room temperature to prevent the gelatin from seizing. Cook on medium-low heat to avoid burning.
