  • 2 ½ cups all-purpose flour, sifted
  • 1 ½ cups granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup whole milk, room temperature
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • Optional: 1 teaspoon almond extract
  • 1 cup unsalted butter for frosting
  • 3-4 cups powdered sugar, sifted
  • ¼ cup heavy cream or whole milk
  • 2 teaspoons pure vanilla extract for frosting
  • Pinch of salt for frosting

Method
 

  1. Preheat oven to 350°F (175°C) and prepare the cake pan.
  2. Whisk together flour, sugar, baking powder, and salt in a large bowl.
  3. Cream the butter and sugar until light and fluffy in an electric mixer.
  4. Add eggs one at a time, mixing in vanilla and almond extracts.
  5. Alternate adding dry ingredients with milk until just combined.
  6. Pour batter into the prepared pan and gently tap to release air bubbles.
  7. Bake for 30-35 minutes or until a skewer inserted comes out clean.
  8. Cool in the pan for 10-15 minutes, then invert onto a cooling rack.
  9. Prepare the buttercream by creaming butter and gradually adding powdered sugar, milk, and vanilla until smooth.
  10. Once cool, frost the cake with a crumb coat, chill, then apply the final frosting layer.

Ensure all ingredients are at room temperature. Sifting flour is essential for a light texture.
