Method
 

  1. In a small saucepan over medium heat, whisk together the milk, pumpkin puree, maple syrup or honey, pumpkin pie spice, cinnamon, and vanilla extract.
  2. Heat the mixture until steaming and well combined, whisking frequently. Do not let it boil.
  3. Add the brewed coffee or espresso and whisk again until smooth and hot.
  4. Pour into a mug and top with whipped cream if desired.
  5. Finish with a light sprinkle of pumpkin pie spice or cinnamon and serve immediately.

Notes

For a richer latte, use oat milk. Adjust the sweetener to taste, and for a stronger coffee flavor use espresso instead of brewed coffee. A frother can also be used for an extra foamy finish.
