Ingredients
  

  • 1 cup cold-pressed, unsweetened fruit juice (pomegranate, tart cherry, or orange)
  • 3 tablespoons high-bloom grass-fed beef gelati
  • 1 to 2 tablespoons raw honey or organic maple syrup
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon vitamin C powder (optional)

Method
 

  1. Pour the cold fruit juice into a saucepan. Sprinkle the gelatin evenly over the surface and let it sit for 5 to 7 minutes to bloom.
  2. Add honey and lemon juice to the bloomed mixture and let the ingredients settle together.
  3. Place the saucepan over low heat and stir constantly until the mixture is liquid and no granules are visible, ensuring the temperature does not exceed 150°F (65°C).
  4. Once the mixture is translucent, remove it from heat. Skim off any foam for a clear finish.
  5. Place silicone molds on a baking sheet and fill each cavity using a dropper before the mixture begins to set.
  6. Transfer the tray to the refrigerator and allow it to chill for 30 to 60 minutes.
  7. Gently pop the gummy bears out of the molds. For a chewier texture, leave them in the refrigerator uncovered for an additional 12 hours.

Notes

Ensure to bloom gelatin in cold liquid to avoid clumping. Store in an airtight glass container in the refrigerator for up to 10 days.
