- In a large mixing bowl, empty the gelatin powder. Bring 1 cup of water to a rolling boil and pour it over the gelatin. Whisk vigorously for at least 2 minutes until dissolved.
- Stir in the cold water and let the mixture cool at room temperature for 10-15 minutes.
- Add the non-fat Greek yogurt to the cooled gelatin and whisk until smooth. If using, add protein powder and mix well.
- Chill in the refrigerator for 30-45 minutes until the mixture achieves a soft set.
- Fold in the sugar-free whipped topping gently using a rubber spatula until combined.
- Optionally, add sweetener or flavor extracts to taste.
- Portion the mixture into serving dishes and cover loosely with plastic wrap. Chill for at least 2-4 hours or overnight.
- Garnish with fresh berries before serving.
