  • 1 box sugar-free gelatin powder (0.6 oz / 17 g)
  • 1 cup boiling water (240 ml)
  • 1/2 cup cold water (120 ml)
  • 1 cup plain non-fat Greek yogurt (240 g)
  • 1 container (8 oz / 226 g) sugar-free whipped topping, thawed
  • 1 scoop (approx. 20-25 g) protein powder (optional)
  • Fresh berries (optional for garnish)
  • Sugar-free sweetener (optional to taste)

Method
 

  1. In a large mixing bowl, empty the gelatin powder. Bring 1 cup of water to a rolling boil and pour it over the gelatin. Whisk vigorously for at least 2 minutes until dissolved.
  2. Stir in the cold water and let the mixture cool at room temperature for 10-15 minutes.
  3. Add the non-fat Greek yogurt to the cooled gelatin and whisk until smooth. If using, add protein powder and mix well.
  4. Chill in the refrigerator for 30-45 minutes until the mixture achieves a soft set.
  5. Fold in the sugar-free whipped topping gently using a rubber spatula until combined.
  6. Optionally, add sweetener or flavor extracts to taste.
  7. Portion the mixture into serving dishes and cover loosely with plastic wrap. Chill for at least 2-4 hours or overnight.
  8. Garnish with fresh berries before serving.

For the best results, ensure proper cooling times and mixing technique. Store leftovers in airtight containers in the refrigerator for up to 3-4 days.
