Method
- Pour 1/2 cup of your chosen fruit juice into a medium saucepan. Sprinkle the unflavored gelatin powder evenly over the juice. Allow it to bloom for 5-10 minutes.
- Place the saucepan over low heat and gently warm the juice-gelatin mixture, whisking constantly until the gelatin completely dissolves.
- Remove from heat. Stir in the remaining 1 1/2 cups of cold fruit juice. Add your chosen natural sweetener to taste, whisking thoroughly.
- If using, stir in citrus zest and optional additions like marine collagen or chia seeds.
- Carefully pour the gelatin mixture into heatproof bowls or ramekins. Arrange fresh fruit at the bottom if desired.
- Transfer to the refrigerator and chill for at least 3-4 hours, or until completely firm and set.
- Once set, garnish with fresh berries or a sprig of mint and enjoy.
Notes
Ensure to bloom gelatin in cold liquid first. Allow adequate chilling time for proper setting.
