Ingredients

  • 1 bar (approx. 20 grams) of Agar-Agar (Gulaman)
  • 5 cups of filtered water
  • 1 cup of organic cane sugar
  • 2 teaspoons of pure vanilla extract or 1 pandan leaf
  • Optional: Fresh coconut milk or fruit slices

Method

  1. Soak the agar-agar bar in 5 cups of filtered water for at least 30 minutes.
  2. Place the saucepan over medium heat and bring to a gentle boil, stirring occasionally until the agar-agar dissolves completely.
  3. Once dissolved, add organic cane sugar and stir until completely dissolved.
  4. Add the vanilla extract or bruised pandan leaf and let simmer for five minutes.
  5. Strain the mixture through a fine-mesh strainer into the mold.
  6. Allow to cool at room temperature for 20 minutes, then refrigerate for at least two hours.

Notes

Always ensure agar-agar is fully dissolved before stopping the stirring process. Avoid high acidity to prevent weakening the setting properties. Store in an airtight container in the refrigerator for freshness.
