  • 3 tablespoons of unflavored gelatin powder or 1.5 teaspoons of agar-agar powder
  • 2 tablespoons of maple syrup or honey
  • 1 tablespoon of fresh lemon juice
  • Optional: Fresh ginger slices or mint leaves

Method
 

  1. Bloom the thickener by pouring 1 cup of cold fruit juice into a small bowl. Sprinkle the gelatin powder or agar-agar evenly over the surface and let it sit for 5 minutes until hydrated.
  2. Pour the remaining 2 cups of juice into a saucepan and bring to a gentle simmer over medium heat.
  3. Whisk in your sweetener and lemon juice, adding any flavor infusions if desired and steeping for three minutes before straining.
  4. Combine the bloomed mixture into the warm saucepan, whisking for 2 to 3 minutes until fully dissolved.
  5. Pour the mixture through a fine-mesh strainer into a glass mold.
  6. Allow sitting at room temperature for 30 minutes, then refrigerate for at least 3 to 4 hours, preferably overnight.
  7. Slice into cubes or diamonds using a warm knife before serving.
