- Bloom the thickener by pouring 1 cup of cold fruit juice into a small bowl. Sprinkle the gelatin powder or agar-agar evenly over the surface and let it sit for 5 minutes until hydrated.
- Pour the remaining 2 cups of juice into a saucepan and bring to a gentle simmer over medium heat.
- Whisk in your sweetener and lemon juice, adding any flavor infusions if desired and steeping for three minutes before straining.
- Combine the bloomed mixture into the warm saucepan, whisking for 2 to 3 minutes until fully dissolved.
- Pour the mixture through a fine-mesh strainer into a glass mold.
- Allow sitting at room temperature for 30 minutes, then refrigerate for at least 3 to 4 hours, preferably overnight.
- Slice into cubes or diamonds using a warm knife before serving.

Ensure to use high-quality ingredients for the best flavor. For a vegan version, use agar-agar instead of gelatin. Always remember to bloom the gelatin correctly to avoid clumping.
