  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamo
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 large egg
  • 3/4 cup milk
  • 1 teaspoon vanilla extract
  • 2 medium apples (peeled, cored, and finely diced)
  • 4-6 cups vegetable oil
  • 1 1/2 cups powdered sugar
  • 2-3 tablespoons milk (or heavy cream)
  • 1/2 teaspoon vanilla extract (for glaze)

Method
 

  1. Prepare your mise en place by peeling, coring, and finely dicing your apples.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk the egg, milk, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and fold until just combined.
  5. Carefully fold in the diced apples until evenly distributed.
  6. Heat 4-6 cups of vegetable oil in a heavy-bottomed pot to 350°F (175°C).
  7. Drop spoonfuls of batter into the hot oil, frying only 3-4 fritters at a time.
  8. Fry for 2-3 minutes per side until golden brown, then drain on a wire rack.
  9. Whisk together the powdered sugar, milk (or cream), and vanilla extract for the glaze.
  10. Glaze the fritters while they are still warm and serve immediately.
