Ingredients
  

  • 3 tablespoons of gelatin powder or agar-agar
  • 0.5 cup of dried hibiscus flowers
  • 2 cups of mixed fresh seasonal berries
  • 2 cups of hot filtered water
  • 1 cup of cold filtered water
  • 0.5 cup of natural sweetener (honey, maple syrup, or agave nectar)
  • 1 cup of chilled sparkling water
  • Zest of one organic lemo

Method
 

  1. Bloom the gelatin by sprinkling it over cold filtered water and letting it sit for 5 to 10 minutes.
  2. Steep the hibiscus in boiling water for 8 minutes and then strain.
  3. Sweeten the warm hibiscus tea with your chosen sweetener.
  4. Dissolve the bloomed gelatin into the warm hibiscus tea, stirring until smooth.
  5. Add the chilled sparkling water and lemon zest, mixing gently.
  6. Arrange the fresh berries in a mold and pour a small amount of liquid to set them in place for 20 minutes.
  7. Pour the remaining liquid into the mold and refrigerate for at least 6 hours or overnight.
  8. Unmold the dessert by dipping the mold in warm water for 5 seconds, then invert onto a plate.

Notes

Handle gelatin carefully to prevent it from heating directly and to ensure it sets properly. Use vibrant, organic ingredients for the best flavor and appearance.
