- Bloom the gelatin by sprinkling it over cold filtered water and letting it sit for 5 to 10 minutes.
- Steep the hibiscus in boiling water for 8 minutes and then strain.
- Sweeten the warm hibiscus tea with your chosen sweetener.
- Dissolve the bloomed gelatin into the warm hibiscus tea, stirring until smooth.
- Add the chilled sparkling water and lemon zest, mixing gently.
- Arrange the fresh berries in a mold and pour a small amount of liquid to set them in place for 20 minutes.
- Pour the remaining liquid into the mold and refrigerate for at least 6 hours or overnight.
- Unmold the dessert by dipping the mold in warm water for 5 seconds, then invert onto a plate.
