Method
 

  1. Bloom the Gelatin: Pour the cold water into a small bowl and sprinkle the unflavored gelatin powder evenly over the surface. Let it sit for about five minutes until it becomes spongy.
  2. Dissolve with Heat: Add the boiling water to the bloomed mixture and whisk until the crystals disappear.
  3. Combine the Milks: In a large bowl, whisk together the sweetened condensed milk and evaporated milk. Slowly pour the dissolved gelatin mixture into the milk mixture while whisking constantly.
  4. Add Flavor: Stir in the pure vanilla extract.
  5. Prepare the Mold: Lightly grease your mold and pour the liquid mixture in.
  6. The First Chill: Refrigerate for at least four to six hours, or overnight if possible.
