- Bloom the Gelatin: Pour the cold water into a small bowl and sprinkle the unflavored gelatin powder evenly over the surface. Let it sit for about five minutes until it becomes spongy.
- Dissolve with Heat: Add the boiling water to the bloomed mixture and whisk until the crystals disappear.
- Combine the Milks: In a large bowl, whisk together the sweetened condensed milk and evaporated milk. Slowly pour the dissolved gelatin mixture into the milk mixture while whisking constantly.
- Add Flavor: Stir in the pure vanilla extract.
- Prepare the Mold: Lightly grease your mold and pour the liquid mixture in.
- The First Chill: Refrigerate for at least four to six hours, or overnight if possible.
- Unmold and Serve: Once firm, invert onto a serving plate and garnish with fruit.
Notes
Use organic or locally sourced milk for best results. To prevent sticking, dip the mold in warm water for a few seconds if needed. Store in an airtight container in the refrigerator for up to five days.
