Ingredients
  

  • 1/4 cup Cold Water
  • 2 tablespoons Grass-Fed Gelatin Powder
  • 2 cups Boiling Water
  • 1/4 cup Natural Sweetener (optional)
  • 1 teaspoon Fresh Lemon Juice
  • 1 cup Mixed Fresh Berries (or other fruit)
  • Pinch of Sea Salt

Method
 

  1. In a medium heatproof bowl, sprinkle the gelatin powder evenly over the cold water and let it sit for 5-10 minutes.
  2. While the gelatin is blooming, bring 2 cups of water to a rolling boil in a small saucepan.
  3. Pour the hot boiling water over the bloomed gelatin mixture in the bowl and whisk continuously for 2-3 minutes until completely dissolved.
  4. Stir in the natural sweetener, fresh lemon juice, and a pinch of sea salt. Taste and adjust sweetness if desired.
  5. Allow the gelatin mixture to cool at room temperature for about 15-20 minutes.
  6. Gently fold in the mixed fresh berries into the slightly cooled gelatin mixture.
  7. Carefully pour the mixture into an 8x8 inch glass dish or individual molds.
  8. Transfer to the refrigerator and chill for at least 4-6 hours, or preferably overnight, until set.
  9. Once set, slice and serve chilled.

Notes

Ensure to allow gelatin to bloom properly for the best texture. Adding fruit to hot liquid can alter texture and vibrancy.
