Method
- In a medium heatproof bowl, sprinkle the gelatin powder evenly over the cold water and let it sit for 5-10 minutes.
- While the gelatin is blooming, bring 2 cups of water to a rolling boil in a small saucepan.
- Pour the hot boiling water over the bloomed gelatin mixture in the bowl and whisk continuously for 2-3 minutes until completely dissolved.
- Stir in the natural sweetener, fresh lemon juice, and a pinch of sea salt. Taste and adjust sweetness if desired.
- Allow the gelatin mixture to cool at room temperature for about 15-20 minutes.
- Gently fold in the mixed fresh berries into the slightly cooled gelatin mixture.
- Carefully pour the mixture into an 8x8 inch glass dish or individual molds.
- Transfer to the refrigerator and chill for at least 4-6 hours, or preferably overnight, until set.
- Once set, slice and serve chilled.
Notes
Ensure to allow gelatin to bloom properly for the best texture. Adding fruit to hot liquid can alter texture and vibrancy.
