Ingredients
  

  • 4 cups 100% natural fruit juice (e.g., cranberry, orange, grape)
  • 4 tablespoons agar-agar powder or 4 packets unflavored gelati
  • 1 cup filtered water
  • 2-4 tablespoons natural sweetener (maple syrup or agave, optional)
  • 1 tablespoon fresh lemon or lime juice (optional)

Method
 

  1. Lightly grease an 8x8 inch baking dish or line with parchment.
  2. Sprinkle agar-agar (or gelatin) over 1 cup of cold water in a saucepan and let sit for 5 minutes.
  3. Add 4 cups of fruit juice and optional sweetener to the saucepan. Whisk continuously over medium heat until it reaches a gentle simmer.
  4. Continue whisking for 2-3 minutes at a gentle simmer and ensure agar-agar is fully dissolved.
  5. Pour hot liquid into prepared mold and let it cool for 10-15 minutes, then refrigerate for 3-4 hours or overnight until completely firm.
  6. Once set, remove from the mold and slice into 1-inch cubes. Serve immediately.

Notes

Luminous clarity: skim any foam from the simmering mixture for crystal-clear cubes. Agar-agar needs gentle boiling for at least 2 minutes to activate. Refrigerate for at least 3-4 hours for ideal firmness.
