Ingredients
  

  • 1 pound fresh asparagus
  • 2 tablespoons extra virgin olive oil
  • 4 cloves fresh garlic, minced
  • Sea salt, to taste
  • Cracked black pepper, to taste
  • Zest of 1 organic lemo
  • Red pepper flakes (optional)

Method
 

  1. Preheat the oven to 425°F (220°C). Wash and pat the asparagus dry.
  2. Trim the woody ends of the asparagus spears.
  3. In a mixing bowl, combine asparagus with olive oil, minced garlic, salt, pepper, and red pepper flakes. Toss to coat.
  4. Arrange the seasoned asparagus in a single layer on a baking sheet.
  5. Roast in the oven for 12 to 15 minutes, until tender-crisp and slightly browned.
  6. Remove from the oven and sprinkle the lemon zest over the hot asparagus. Serve immediately.

Notes

Ensure asparagus is dry before adding oil to avoid steaming. Mince garlic into small bits to prevent burning. If garlic browns too quickly, add it halfway through roasting.
