Method
- Clean mushrooms with a damp paper towel or soft brush; quarter or slice them.
- Heat a cast iron skillet over medium-high heat, add mushrooms to the dry pan and cook for 3-5 minutes until browned.
- Add olive oil and 2 tablespoons of butter, then toss mushrooms to coat.
- Reduce heat to medium, add garlic and thyme, sauté for 60-90 seconds.
- Stir in remaining butter and a squeeze of lemon juice, season with salt and pepper.
- Remove from heat, toss in parsley, and serve immediately.
Notes
Do not soak mushrooms; avoid overcrowding the pan. Use fresh herbs for best flavor.
