Ingredients
  

  • 16 ounces Cremini or White Button mushrooms
  • 4 large cloves garlic, minced
  • 3 tablespoons unsalted European-style butter
  • 1 tablespoon extra virgin olive oil
  • Fresh thyme, to taste
  • Fresh parsley, chopped, for garnish
  • Kosher salt, to taste
  • Cracked black pepper, to taste
  • Lemon juice, to taste

Method
 

  1. Clean mushrooms with a damp paper towel or soft brush; quarter or slice them.
  2. Heat a cast iron skillet over medium-high heat, add mushrooms to the dry pan and cook for 3-5 minutes until browned.
  3. Add olive oil and 2 tablespoons of butter, then toss mushrooms to coat.
  4. Reduce heat to medium, add garlic and thyme, sauté for 60-90 seconds.
  5. Stir in remaining butter and a squeeze of lemon juice, season with salt and pepper.
  6. Remove from heat, toss in parsley, and serve immediately.

Notes

Do not soak mushrooms; avoid overcrowding the pan. Use fresh herbs for best flavor.
