  • 3 cups organic fruit juice (unsweetened)
  • 2 teaspoons agar-agar powder
  • 2 to 3 tablespoons organic maple syrup or agave nectar
  • 2 cups mixed fresh fruits (chopped)
  • 1 tablespoon fresh lemon juice
  • A handful of fresh mint leaves

Method
 

  1. Wash and dice your chosen fruits into bite-sized pieces. Squeeze lemon juice over the fruit and toss gently.
  2. Pour the cold organic fruit juice into a medium saucepan. Sprinkle agar-agar powder and let sit for two minutes.
  3. Turn the heat to medium and bring the mixture to a gentle simmer, whisking constantly until the agar-agar dissolves. Simmer for about 3 minutes.
  4. Stir in maple syrup or agave nectar, tasting to adjust sweetness.
  5. Arrange the prepared fruit pieces in a mold or individual ramekins, leaving space at the top.
  6. Carefully pour the hot juice mixture over the fruit and gently tap the mold to release air bubbles.
  7. Allow to cool to room temperature, then refrigerate for 2 to 3 hours until firm.
  8. To unmold, run a thin knife around the edges or dip the mold in warm water, then invert onto a plate and garnish with mint.

Focus on high-quality organic fruits for the best flavor. Work quickly as agar-agar begins to set at room temperature.
