Method
- Gather all your ingredients and ensure your silicone molds are clean and dry.
- In a glass mixing bowl, combine the plant-based yogurt, peanut butter, maple syrup, and vanilla bean paste.
- Whisk the mixture until smooth and well combined.
- Taste the mixture and add a pinch of sea salt if desired.
- Portion the mixture into the molds or a lined baking sheet.
- Tap the tray on the counter to level the tops and remove air bubbles.
- Sprinkle the cacao nibs over each individual bite.
- Freeze for at least three to four hours until firm.
- Once set, pop the bites out of the molds and serve.
Notes
Use high-quality ingredients for the best flavor. If using a metal tray, line it with a silicone mat. Store in an airtight container in the freezer.
