Method
 

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix the melted butter, minced garlic, parsley, Italian seasoning, salt, and black pepper. Set aside.
  3. Lightly dust a clean surface with flour and divide the pizza dough into 8 equal pieces.
  4. Flatten each piece into a small round, place about 2 tablespoons of mozzarella in the center, and pinch the dough closed tightly to seal the cheese inside.
  5. Shape each stuffed dough ball into a slightly oval, football-like form and place them seam-side down on the prepared baking sheet in a football cluster or single football shape, leaving a little space between each roll.
  6. In a small bowl, whisk together the beaten egg and milk, then brush the tops of the rolls with the egg wash.
  7. Drizzle or brush the garlic butter mixture over the rolls, then sprinkle the Parmesan cheese evenly on top.
  8. Use a small sharp knife to make shallow diagonal cuts across each roll to resemble football laces if desired.
  9. Bake for 18 to 22 minutes, or until the rolls are golden brown and the cheese is melted and bubbling.
  10. Remove from the oven, brush with any remaining garlic butter, garnish with extra parsley, and let cool for 5 minutes before serving with marinara sauce.

Notes

For best results, make sure the dough is at room temperature so it is easier to shape and seal. You can swap the mozzarella for another good melting cheese, but avoid overfilling to prevent leaks during baking.
