- Crack eggs into a bowl, add salt and pepper, whisk until combined.
- Heat skillet over medium heat, add oil, sauté spinach for 1 minute, then set aside.
- In the same skillet, pour in the whisked eggs, scramble until just set.
- Lay tortilla flat, sprinkle cheese, add eggs and spinach, top with more cheese.
- Fold sides of tortilla inward, roll tight from the bottom up.
- Grill seam-side down on medium-low heat until golden brown, about 2-3 minutes each side.
- Slice in half and serve immediately.
