Ingredients
  

  • 2 large flour tortillas
  • 2 large organic eggs
  • 1 cup sharp cheddar cheese, grated
  • 1 handful fresh baby spinach
  • 1 tablespoon avocado oil or butter
  • Sea salt and black pepper to taste
  • Optional: cooked turkey bacon or black beans

Method
 

  1. Crack eggs into a bowl, add salt and pepper, whisk until combined.
  2. Heat skillet over medium heat, add oil, sauté spinach for 1 minute, then set aside.
  3. In the same skillet, pour in the whisked eggs, scramble until just set.
  4. Lay tortilla flat, sprinkle cheese, add eggs and spinach, top with more cheese.
  5. Fold sides of tortilla inward, roll tight from the bottom up.
  6. Grill seam-side down on medium-low heat until golden brown, about 2-3 minutes each side.
  7. Slice in half and serve immediately.

Notes

Choose high-quality ingredients for best flavor. Use medium-low heat to avoid burning the tortilla. Wrap finished burritos for meal prep.
