- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and cook for 3-4 minutes until softened.
- Stir in the minced garlic, cumin, chili powder, and smoked paprika, and cook for another 1 minute until fragrant.
- Pour in the chicken broth, enchilada sauce, and diced tomatoes. Stir to combine.
- Add the shredded chicken, black beans, and corn to the pot. Bring the mixture to a gentle boil.
- Reduce the heat to low and let the soup simmer for 20 minutes, stirring occasionally.
- Season the soup with salt and pepper to taste. If desired, stir in the chopped cilantro.
- Serve the soup hot, topped with shredded cheddar cheese, a dollop of sour cream, and tortilla chips or strips on the side.
Notes
For a spicier soup, add a diced jalapeƱo or a pinch of cayenne pepper. You can also use rotisserie chicken for convenience.
