Method
- Wash the strawberries under cold running water and gently pat them dry.
- Hull the berries and create a hollow in the center of each.
- Create a flat surface if necessary by slicing a bit off the bottom of each strawberry.
- Mix the vegan cream cheese, maple syrup, vanilla bean paste, and lemon zest until smooth.
- Transfer the mixture into a piping bag and fill the strawberries generously.
- Garnish with crushed pistachios and mint leaves.

Ensure the cream cheese is at room temperature and the strawberries are dry to prevent the filling from sliding out.
