Method
 

  1. Wash the strawberries under cold running water and gently pat them dry.
  2. Hull the berries and create a hollow in the center of each.
  3. Create a flat surface if necessary by slicing a bit off the bottom of each strawberry.
  4. Mix the vegan cream cheese, maple syrup, vanilla bean paste, and lemon zest until smooth.
  5. Transfer the mixture into a piping bag and fill the strawberries generously.
  6. Garnish with crushed pistachios and mint leaves.
