Ingredients
  

  • 2 packets of orange gelati
  • 1 packet of lemon gelati
  • 2 cups boiling water
  • 1 cup cold pineapple juice
  • 1 can crushed pineapple, drained
  • 1 cup grated carrots
  • 1 cup finely chopped celery
  • 1/2 cup chopped walnuts

Method
 

  1. Boil two cups of filtered water in a kettle.
  2. Empty the orange and lemon gelatin packets into a large mixing bowl.
  3. Slowly pour the boiling water over the gelatin and whisk until the granules are dissolved.
  4. Stir in the cold pineapple juice.
  5. Place the bowl in the refrigerator for about 30 minutes.
  6. Monitor until the mixture reaches the consistency of heavy syrup.
  7. Fold in the crushed pineapple, grated carrots, chopped celery, and walnuts.
  8. Pour the mixture into your chosen mold or glass dish.
  9. Chill the salad in the refrigerator for at least four hours.
  10. To unmold, dip the bottom of the pan into warm water, then flip onto a serving plate.

Notes

Use organic produce for the best flavors. Drain pineapple well to ensure proper setting. For a vegan option, use agar-agar instead of gelatin.
