Method
- Boil two cups of filtered water in a kettle.
- Empty the orange and lemon gelatin packets into a large mixing bowl.
- Slowly pour the boiling water over the gelatin and whisk until the granules are dissolved.
- Stir in the cold pineapple juice.
- Place the bowl in the refrigerator for about 30 minutes.
- Monitor until the mixture reaches the consistency of heavy syrup.
- Fold in the crushed pineapple, grated carrots, chopped celery, and walnuts.
- Pour the mixture into your chosen mold or glass dish.
- Chill the salad in the refrigerator for at least four hours.
- To unmold, dip the bottom of the pan into warm water, then flip onto a serving plate.
Notes
Use organic produce for the best flavors. Drain pineapple well to ensure proper setting. For a vegan option, use agar-agar instead of gelatin.
