- Wash the strawberries and remove the green hulls, then blend them until liquified.
- Strain the strawberry puree through a fine-mesh sieve into a bowl.
- Combine coconut milk, maple syrup, and agar-agar powder in a saucepan and whisk together while cold.
- Heat the mixture on medium-high and bring to a gentle boil, then simmer for 2-3 minutes.
- Remove from heat and stir in the strawberry puree, lemon juice, vanilla bean paste, and sea salt.
- Pour the mixture into molds and let sit at room temperature for 15 minutes before transferring to the refrigerator.
- Chill for at least 3-4 hours until set.

Always measure agar-agar precisely; it sets faster than traditional gelatin. Ensure strawberry puree is at room temperature before mixing with hot ingredients.
