  • 2 cups fresh organic strawberries
  • 2 tablespoons agar-agar powder
  • 1 can full-fat coconut milk
  • 1/4 cup pure maple syrup
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla bean paste
  • pinch of sea salt

Method
 

  1. Wash the strawberries and remove the green hulls, then blend them until liquified.
  2. Strain the strawberry puree through a fine-mesh sieve into a bowl.
  3. Combine coconut milk, maple syrup, and agar-agar powder in a saucepan and whisk together while cold.
  4. Heat the mixture on medium-high and bring to a gentle boil, then simmer for 2-3 minutes.
  5. Remove from heat and stir in the strawberry puree, lemon juice, vanilla bean paste, and sea salt.
  6. Pour the mixture into molds and let sit at room temperature for 15 minutes before transferring to the refrigerator.
  7. Chill for at least 3-4 hours until set.

Notes

Always measure agar-agar precisely; it sets faster than traditional gelatin. Ensure strawberry puree is at room temperature before mixing with hot ingredients.
