  • ¼ cup granulated sugar
  • 2 ¼ teaspoons instant dry yeast
  • 1 cup warm plant-based milk (almond or oat milk)
  • ¼ cup vegan butter, melted
  • 3 tablespoons aquafaba
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • Vegetable oil for frying
  • 1 can full-fat coconut milk (13.5 oz), chilled
  • ½ cup powdered sugar, sifted
  • 1 teaspoon vanilla extract (for filling)
  • 1 tablespoon cornstarch (optional)
  • Powdered sugar for dusting

Method
 

  1. Activate the Yeast: In a small bowl, combine warm plant-based milk, 1 tablespoon of granulated sugar, and instant yeast. Let it sit for 5-10 minutes until foamy.
  2. Combine Wet Ingredients: In a large mixing bowl, pour the yeast mixture. Add melted vegan butter, aquafaba, vanilla extract, and remaining granulated sugar. Whisk together until combined.
  3. Add Dry Ingredients: Gradually add all-purpose flour and salt. Knead until the dough is smooth and elastic.
  4. First Rise: Form dough into a ball, grease the bowl, cover, and let rise in a warm place for 1 to 1.5 hours.
  5. Shape the Donuts: Roll dough to ½-inch thickness, cut out donut shapes, and place on parchment paper.
  6. Second Rise: Cover shaped donuts and let rise for another 30-45 minutes.
  7. Prepare Cream Filling: Scoop thick coconut cream from chilled coconut milk, beat with powdered sugar, vanilla extract, and cornstarch until fluffy.
  8. Fry the Donuts: Heat vegetable oil to 350°F, fry donuts 1-2 minutes per side until golden brown.
  9. Drain and Cool: Place fried donuts on a wire cooling rack to drain excess oil.
  10. Fill the Donuts: Once cooled, poke a hole in each donut, use a piping bag to fill with cream.
  11. Finish and Serve: Dust with powdered sugar and enjoy.
