Method
- Bloom the gelatin by sprinkling it over 1/2 cup of cold filtered water and letting it sit for 5-10 minutes.
- Simmer the fresh cranberries, remaining water, fruit juice, maple syrup, and cinnamon stick in a saucepan on medium heat until boiling, then reduce heat and simmer for 8-10 minutes.
- Remove the saucepan from heat, discard the cinnamon stick, and whisk in the bloomed gelatin until fully dissolved.
- Stir in the fresh orange zest and optional texture add-ins if desired.
- Prepare the mold by lightly greasing it with oil and pour the mixture evenly into it.
- Chill in the refrigerator for at least 6 hours or overnight until set.
- To unmold, dip the bottom of the mold in warm water for about 10 seconds and invert onto a chilled platter.
Notes
