Ingredients
  

  • 1 pound lump crab meat
  • 1/2 cup panko breadcrumbs
  • 1/4 cup mayonnaise
  • 1 large egg
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh parsley
  • 1 teaspoon Old Bay seasoning
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 1 green onio
  • 18-20 egg roll wrappers
  • 1 large egg (for egg wash)
  • 3-4 cups neutral oil for frying
  • Optional: Lemon wedges, sweet chili sauce, fresh cilantro or chives

Method
 

  1. Prepare the crab filling by mixing all filling ingredients in a large bowl without breaking the crab too much.
  2. Chill the filling for at least 30 minutes.
  3. Set up a rolling station with egg roll wrappers and egg wash.
  4. Portion the filling into equal parts and shape them into logs.
  5. Roll the egg rolls and seal them tightly with egg wash.
  6. Preheat oil to 350°F for frying or preheat the oven to 400°F if baking.
  7. Fry the egg rolls until golden brown, about 3-5 minutes, or bake for 18-25 minutes until crispy.
  8. Drain excess oil and serve immediately with lemon wedges and dipping sauce.

Notes

Ensure high-quality crab meat for the best taste. You can customize the filling with vegetables or spice it up with cayenne. These can also be made ahead and store well.
