  • 2 cups (500ml) freshly brewed coffee
  • 1 tablespoon (approx. 10g) unflavored gelatin powder
  • 1/4 cup cold water (to bloom)
  • 2-3 tablespoons maple syrup or honey
  • 1/2 teaspoon vanilla extract

Method
 

  1. Bloom the Gelatin: In a small bowl, sprinkle the gelatin over cold water and let sit for 5-10 minutes.
  2. Brew the Coffee: Brew 2 cups of strong coffee while the gelatin blooms.
  3. Heat and Dissolve: Pour hot coffee into a saucepan over low heat and add bloomed gelatin. Stir until dissolved.
  4. Sweeten and Flavor: Whisk in maple syrup or honey and vanilla extract, then taste and adjust sweetness if necessary.
  5. Set the Jelly: Pour the mixture into a glass container, skimming off bubbles, and let cool to room temperature.
  6. Chill: Refrigerate for at least 4-6 hours, or overnight, until set.
  7. Cut and Serve: Cut into small cubes and serve as desired.

Notes

Fine coffee quality is important. Use a strong brew, ideally organic and fair-trade. Agar-agar can be substituted for a vegan option.
