Ingredients
  

  • 1 cup unsweetened plant milk (oat milk, almond milk, cashew milk, or coconut milk)
  • 1/2 cup full-fat coconut milk
  • 2-4 tablespoons maple syrup or agave nectar
  • 1-2 tablespoons dates or erythritol/stevia (optional)
  • 1 teaspoon pure vanilla extract (optional)
  • 1/4 teaspoon cinnamon or pumpkin pie spice (optional)
  • 1 tablespoon unsweetened cocoa powder (optional)
  • 1/4 teaspoon almond extract (optional)
  • 1-2 tablespoons brewed coffee or espresso (optional)
  • A pinch of sea salt

Method
 

  1. Combine the unsweetened plant milk of your choice and the full-fat canned coconut milk in a high-speed blender.
  2. Warm the base liquids gently in a small saucepan for better flavor infusion, if desired.
  3. Add sweeteners and any flavor boosters to the blender.
  4. Blend on high until smooth and creamy, about 1-2 minutes.
  5. Taste and adjust the flavors or sweetness as desired, then blend again briefly.
  6. Optionally strain the mixture through a fine-mesh sieve into a storage container.
  7. Pour your finished coffee creamer into a clean, airtight bottle and refrigerate.

Notes

Homemade creamers can separate; shake well before each use. Store in the refrigerator and consume within 5-7 days.
