Ingredients
  

  • 6 to 8 medium fresh clementines
  • 2-3 scoops high-quality collagen peptides
  • 1/2 cup full-fat coconut milk or Greek yogurt
  • 2 tablespoons pure maple syrup or agave nectar
  • 1 teaspoon vanilla bean paste or extract
  • 1 tablespoon fresh clementine zest

Method
 

  1. Prepare the Fruit: Wash the clementines. Use a zester to collect zest and set aside. Peel the fruit and remove pith.
  2. Blend the Base: Blend the clementine segments with coconut milk, maple syrup, vanilla, and collagen peptides until liquefied.
  3. Incorporate the Aromatics: Pulse in the fresh clementine zest.
  4. Fill the Molds: Pour the mixture into popsicle molds, leaving space at the top.
  5. Add the Sticks: Insert wooden sticks into molds and freeze for 4-6 hours.
  6. Unmold: Run molds under warm water for 10 seconds to release pops.

Notes

To reduce ice crystals, simmer juice to concentrate. Store pops individually wrapped.
