- Prepare the Fruit: Wash the clementines. Use a zester to collect zest and set aside. Peel the fruit and remove pith.
- Blend the Base: Blend the clementine segments with coconut milk, maple syrup, vanilla, and collagen peptides until liquefied.
- Incorporate the Aromatics: Pulse in the fresh clementine zest.
- Fill the Molds: Pour the mixture into popsicle molds, leaving space at the top.
- Add the Sticks: Insert wooden sticks into molds and freeze for 4-6 hours.
- Unmold: Run molds under warm water for 10 seconds to release pops.
Notes
To reduce ice crystals, simmer juice to concentrate. Store pops individually wrapped.
