Ingredients
  

  • 2 cups (240g) all-purpose flour
  • ¾ cup (150g) granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (240ml) unsweetened plant-based milk
  • ½ cup (120ml) melted vegan butter or coconut oil
  • 1 teaspoon vanilla extract
  • ½ cup (100g) granulated sugar for coating
  • 2 tablespoons ground cinnamo

Method
 

  1. Preheat your oven to 350°F (175°C). Lightly grease a donut baking pan.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
  3. In a medium bowl, whisk together the plant-based milk, melted vegan butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Transfer the batter into a piping bag and pipe into the donut pan, filling each cavity about two-thirds full.
  6. Bake for 10-12 minutes, until golden brown and a toothpick comes out clean.
  7. Allow the donuts to cool in the pan for 5 minutes before removing.
  8. Combine sugar and cinnamon in a shallow dish for coating.
  9. Brush the warm donuts with melted vegan butter and roll them in the cinnamon sugar mixture.
  10. Serve warm.

Notes

Do not overmix the batter to ensure fluffy donuts. Use a piping bag for neat filling and coat while warm for the best flavor.
