Method
 

  1. Activate the yeast by warming the milk to about 110 degrees Fahrenheit, stirring in a teaspoon of sugar, and sprinkling the yeast on top. Let it sit for ten minutes.
  2. In a mixing bowl, whisk together the flour, collagen peptides, and sea salt.
  3. Add the melted butter, egg, and yeast mixture to the dry ingredients and mix until a soft dough begins to form.
  4. Increase the speed and knead the dough for about five to seven minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a warm cloth, and let it rise for one hour.
  6. Prepare the filling by mixing softened butter, coconut sugar, and Ceylon cinnamon.
  7. Roll the dough into a large rectangle, spread the cinnamon mixture, then roll it into a log and cut into twelve pieces.
  8. Arrange the rolls in a prepared baking dish, cover, and let them rise again for 30-45 minutes.
  9. Preheat the oven to 350 degrees Fahrenheit and bake for 20-25 minutes until golden brown.
  10. Drizzle with a light glaze made of Greek yogurt and honey while warm.
