Ingredients
Method
- Activate the yeast by warming the milk to about 110 degrees Fahrenheit, stirring in a teaspoon of sugar, and sprinkling the yeast on top. Let it sit for ten minutes.
- In a mixing bowl, whisk together the flour, collagen peptides, and sea salt.
- Add the melted butter, egg, and yeast mixture to the dry ingredients and mix until a soft dough begins to form.
- Increase the speed and knead the dough for about five to seven minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a warm cloth, and let it rise for one hour.
- Prepare the filling by mixing softened butter, coconut sugar, and Ceylon cinnamon.
- Roll the dough into a large rectangle, spread the cinnamon mixture, then roll it into a log and cut into twelve pieces.
- Arrange the rolls in a prepared baking dish, cover, and let them rise again for 30-45 minutes.
- Preheat the oven to 350 degrees Fahrenheit and bake for 20-25 minutes until golden brown.
- Drizzle with a light glaze made of Greek yogurt and honey while warm.
Notes
Always measure flour using the spoon and level method. Check the milk temperature to ensure proper yeast activation. Proof in a warm place for best results.
