Ingredients
  

  • 4 medium cucumbers (about 1.5 lbs)
  • 2 large green bell peppers
  • 1 large white onio
  • 3 celery stalks
  • 1/2 small head cabbage (about 1 lb)
  • 1.5 cups apple cider vinegar
  • 1 cup granulated sugar
  • 1 teaspoon turmeric powder
  • 1 teaspoon celery seeds
  • 1 teaspoon mustard seeds
  • 1 tablespoon fine sea salt
  • 1 cup water
  • 1/4 teaspoon red pepper flakes (optional)

Method
 

  1. Wash all vegetables thoroughly and finely chop them using a food processor.
  2. Transfer the chopped vegetables to a colander, sprinkle with salt, and let sit for 1-3 hours to drain excess water.
  3. Rinse the vegetable mixture under cold water and squeeze out excess liquid.
  4. In a large pot, combine the squeezed vegetable mixture with apple cider vinegar, sugar, turmeric, celery seeds, mustard seeds, and red pepper flakes (if using).
  5. Bring the mixture to a boil, then reduce heat and simmer uncovered for 20-25 minutes while stirring frequently.
  6. Taste and adjust seasoning if necessary.
  7. Cool the relish completely and spoon into sterilized jars, sealing tightly.
  8. Refrigerate for at least 24 hours before serving.

Notes

Make ahead for better flavor. Store in airtight jars in the refrigerator for up to 3-4 weeks, or can for longer shelf life.
