Method
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius) and lightly grease your baking dish.
- Wash the asparagus thoroughly and snap off the woody ends.
- Place the bacon in a cold skillet and turn the heat to medium. Fry until crispy.
- Remove the bacon and let it drain, keeping two tablespoons of bacon fat in the skillet.
- Add butter to the skillet with the bacon fat and sauté the minced garlic for one minute.
- Pour heavy cream into the skillet. Whisk in the smoked paprika, salt, pepper, and red pepper flakes. Simmer for three minutes.
- Stir in one cup of cheddar cheese until melted.
- Arrange asparagus in a single layer in the baking dish.
- Pour the creamy cheese sauce over the asparagus.
- Crumble the crispy bacon on top and sprinkle the remaining cheddar and parmesan cheese.
- Bake for 15 to 20 minutes until cheese is bubbly and golden brown. Broil for the last two minutes if desired.
Notes
Remove woody ends from asparagus. Do not cover while baking to prevent a watery sauce.
