Ingredients
  

  • 2 pounds of fresh green asparagus, trimmed and cleaned
  • 1 cup of heavy cream (organic or grass-fed preferred)
  • 2 cups of shredded sharp cheddar cheese
  • 1/2 cup of freshly grated Parmesan cheese
  • 3 cloves of garlic, minced
  • 2 tablespoons of unsalted grass-fed butter
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of sea salt
  • 1/2 teaspoon of cracked black pepper
  • A pinch of red pepper flakes

Method
 

  1. Preheat your oven to 400°F (200°C) and lightly grease your baking dish.
  2. Wash the asparagus and snap off the woody ends.
  3. Arrange the asparagus spears in a single layer in the baking dish.
  4. In a skillet, melt the butter and sauté the minced garlic until fragrant.
  5. Pour the heavy cream into the skillet and bring it to a gentle simmer, whisking constantly.
  6. Stir in 1.5 cups of cheddar cheese, salt, pepper, and smoked paprika until thick.
  7. Pour the cheese sauce over the asparagus, coating well.
  8. Sprinkle the remaining cheddar and Parmesan over the top.
  9. Bake for 15 to 20 minutes until asparagus is tender and cheese is bubbling.
  10. Broil for 2 minutes to brown the top if desired.
  11. Let the casserole rest for 5 minutes before serving.
