Ingredients
  

  • 1 Pre-chilled Pie Crust
  • 1 Bunch of Fresh Asparagus
  • 1.5 Cups of Sharp Cheddar Cheese
  • 4 Large Organic Eggs
  • 1 Cup of Heavy Cream
  • 1/2 Cup of Whole Milk
  • 1 Small Shallot
  • 1 Teaspoon of Sea Salt
  • 1/2 Teaspoon of Black Pepper
  • 1/4 Teaspoon of Nutmeg

Method
 

  1. Preheat your oven to 375°F (190°C). Place your pie crust into the dish and crimp the edges. Blind bake the crust for 10 minutes.
  2. Wash the asparagus and snap off the woody ends. Cut the spears into 1-inch pieces.
  3. In a skillet, heat olive oil. Sauté the minced shallots until translucent, then add the asparagus pieces and cook for 3 minutes.
  4. In a large mixing bowl, whisk the eggs, then slowly add heavy cream and milk. Stir in salt, pepper, and nutmeg.
  5. Spread half of the grated cheddar cheese in the crust, layer with sautéed shallots and asparagus, then pour the egg mixture over it and sprinkle with remaining cheese.
  6. Arrange asparagus tips on top in a starburst pattern, then bake for 35 to 40 minutes until the top is golden brown.
  7. Allow the quiche to rest for at least 15 minutes before slicing.

Notes

Ensure vegetables are dry to prevent excess moisture in the quiche. Use room temperature dairy ingredients for better emulsion.
