- In a large mixing bowl, combine flour, coconut sugar, baking powder, baking soda, and spices; whisk thoroughly.
- In a medium bowl, mix oil, vanilla extract, and thickened flax eggs until smooth.
- Gently pour wet ingredients into dry and fold together until no dry flour streaks remain.
- Fold in grated carrots and chopped walnuts.
- Transfer to the prepared pan and smooth the top; bake for 50 to 60 minutes until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
