Ingredients
  

  • 3 cups Grated Carrots
  • 2 cups Spelt or All-Purpose Flour
  • 1 cup Coconut Sugar
  • 1/2 cup Avocado or Olive Oil
  • 2 Flax Eggs
  • Cinnamon, Ginger, Nutmeg
  • Baking Powder & Soda
  • 1/2 cup Chopped Walnuts

Method
 

  1. Preheat your oven to 350°F (175°C) and line a loaf pan with compostable parchment paper.
  2. In a small bowl, whisk ground flaxseed with water and let it sit for about five minutes until gel-like.
  3. In a large mixing bowl, combine flour, coconut sugar, baking powder, baking soda, and spices; whisk thoroughly.
  4. In a medium bowl, mix oil, vanilla extract, and thickened flax eggs until smooth.
  5. Gently pour wet ingredients into dry and fold together until no dry flour streaks remain.
  6. Fold in grated carrots and chopped walnuts.
  7. Transfer to the prepared pan and smooth the top; bake for 50 to 60 minutes until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Ensure carrots are not overly juicy to prevent a dense loaf. Using room-temperature ingredients helps in emulsification. Consider toasting spices for enhanced flavor.
