Method
 

  1. Brew 1 cup of chai tea and set it aside while you prepare the other components.
  2. In a small saucepan over medium heat, combine 1/2 cup milk, 2 tablespoons pumpkin puree, 2 tablespoons caramel sauce, 1/2 teaspoon pumpkin pie spice, and 1 tablespoon sugar (if using). Whisk until the mixture is hot and fully combined, but do not let it boil.
  3. Add the hot pumpkin milk mixture to the brewed chai tea and stir until well blended. Set aside.
  4. To make the pumpkin cold foam, combine 1/2 cup heavy cream, 1 tablespoon pumpkin puree, 1 tablespoon maple syrup, and 1/4 teaspoon pumpkin pie spice in a bowl. Whisk or use a milk frother to whip the mixture until it reaches a light, creamy foam consistency.
  5. If serving iced, fill a glass with ice cubes. Pour the chai latte mixture over the ice. If serving hot, pour the chai latte mixture directly into a mug.
  6. Top the chai latte with a generous layer of pumpkin cold foam.
  7. Drizzle caramel sauce over the cold foam for an extra touch of sweetness and garnish, if desired.

Notes

For a dairy-free version, use plant-based milk and coconut cream for the cold foam. Adjust the sweetness to your preference by adding more or less sugar or maple syrup.
