  • 4 large organic Honeycrisp or Pink Lady apples, peeled, cored, and finely diced
  • 3 tablespoons grass-fed gelatin powder
  • 2 cups unfiltered, raw apple cider
  • 1/3 cup Grade A maple syrup
  • 2 whole cinnamon sticks
  • 1 tablespoon freshly squeezed lemon juice
  • 1 cup filtered water
  • 1 small pod star anise (optional)

Method
 

  1. Prepare the Fruit: Peel and dice the apples into small, uniform cubes and toss with lemon juice.
  2. Bloom the Gelatin: Pour cold water into a bowl and sprinkle gelatin over it. Let sit for about 5-10 minutes.
  3. Simmer the Base: In a saucepan, combine apple cider, maple syrup, cinnamon sticks, and star anise. Simmer gently.
  4. Cook the Apples: Add diced apples to the mixture and cook for about 8 minutes until tender.
  5. Integrate the Gelatin: Remove from heat, whisk in the bloomed gelatin until dissolved.
  6. The Final Pour: Remove cinnamon sticks and star anise, pour mixture into molds.
  7. The Cooling Phase: Let sit at room temperature for 30 minutes.
  8. Setting the Gel: Refrigerate for at least 4-6 hours, preferably overnight.
