  • 1 medium head green cabbage
  • 4 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Sea salt to taste
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh lemon juice

Method
 

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius).
  2. Remove any damaged outer leaves from the cabbage. Slice the head into thick disks, approximately one inch wide, keeping the core intact.
  3. Pat the cabbage slices dry with a paper towel.
  4. In a small bowl, whisk together olive oil, garlic powder, smoked paprika, salt, and pepper.
  5. Arrange cabbage disks on a baking sheet and coat both sides with the oil mixture.
  6. Place the baking sheet in the middle rack of the oven.
  7. Roast for 15 minutes, then carefully flip each disk.
  8. Roast for another 10 to 15 minutes until the edges are golden brown and the core is tender.
  9. Drizzle fresh lemon juice over the hot cabbage and let it rest for three minutes.

Notes

Maximize surface area by slicing cabbage for more contact with the pan. Use a heavy, dark-colored baking sheet for better browning. Avoid excess moisture to prevent sogginess.
