- Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius).
- Remove any damaged outer leaves from the cabbage. Slice the head into thick disks, approximately one inch wide, keeping the core intact.
- Pat the cabbage slices dry with a paper towel.
- In a small bowl, whisk together olive oil, garlic powder, smoked paprika, salt, and pepper.
- Arrange cabbage disks on a baking sheet and coat both sides with the oil mixture.
- Place the baking sheet in the middle rack of the oven.
- Roast for 15 minutes, then carefully flip each disk.
- Roast for another 10 to 15 minutes until the edges are golden brown and the core is tender.
- Drizzle fresh lemon juice over the hot cabbage and let it rest for three minutes.
Notes
Maximize surface area by slicing cabbage for more contact with the pan. Use a heavy, dark-colored baking sheet for better browning. Avoid excess moisture to prevent sogginess.
